Bee bread

Bee bread is the pollen preserved by the bees themselves. When the pollen is brought to the hive it is being stored. Bees fill 2-3 to 3/4 of the honeycomb with a mixture of pollen, nectar and saliva, ram it with their heads and lay a cover of honey over it thus preventing air from accessing it.

Pollen is preserved by the means of a lactic acid, which is generated during the process of lactic fermentation. As a result a new product is obtained – bee bread. Lactic acid effectively prevents microorganisms from forming thus bee bread maybe stored without a fear of degrading. It features a brown shade and resembles a piece of loaf of rye-bread.

I could not agree more with your slogan – “More than honey”. The various nuts covered in honey are indeed more than a honey itself and even more than honey in nuts. It is perhaps the National park of Gauja taking care of the rest. Tasty indeed.
